Sizzling Skewers 3 Ways | BBQ Meal Prep

These sizzling skewers will raise your BBQ game and then some.

It’s time to treat yourself to something a little more exciting than another batch of hotdogs. The weather doesn’t always play ball with BBQ plans, so when you do get the chance to fire up the coals, you deserve to enjoy something this special for your efforts.

Whether you’re into the classic halloumi & veg combo, a killer honey-garlic chicken option, or you want to push the boat out with a spicy prawn number — we’ve got something to suit everyone.

Here’s how to make them.

 

1. Sriracha Prawn Skewers

If you’re after something to spice up your BBQ menu, this is definitely the recipe for you.

Serves 4

Ingredients

  • 50ml soy sauce
  • 2 tbsp. lime juice
  • 2 tsp. sriracha
  • 2 garlic cloves (minced)
  • 1 tbsp. brown sugar
  • Lemon zest
  • Lime zest
  • Pinch of salt
  • 600g prawns

Method

1) First, add all of the ingredients for the marinade to a bowl and stir well so that the mixture is properly combined.

2) Add the prawns making sure that they’re fully covered in the marinade, and then leave to marinate for 1 hour.

3) Then, carefully slide each prawn onto your skewers to build them up. We’ve gone for 4 prawns on each one.

4) Place on your BBQ and grill until the prawns are cooked through. They should turn from a pale grey to a deep pink with a crispy outside.

2. Honey-Garlic Chicken Skewers

Give your chicken the glow up it deserves with this incredible honey-garlic marinade.

Serves 4

Ingredients

For the marinade:
  • 3 tbsp. dark soy sauce
  • 1 tbsp. sesame oil
  • 1 tbsp. vegetable oil
  • 3 tbsp. honey
  • 2 garlic cloves (minced)
  • 1 tsp. ginger (chopped)
  • Pinch of salt
For the rest:
  • 3 chicken breasts (cubed)
  • 1 red pepper (chopped)
  • 1 onion (chopped)

Method

1) First, add all of the ingredients for the marinade to a bowl and stir well so that the mixture is properly combined.

2) Add the cubes of chicken and stir to make sure that they’re fully covered in the marinade. Cover and leave to marinate for 1 hour.

3) Then, build your skewers up by alternating between the marinated chicken pieces and the chopped onion & pepper.

4) BBQ until fully cooked through — the chicken should turn from pink to white on the inside. Enjoy!

3. Veggie & Halloumi Skewers

Who says you need meat to make a skewer special? This smoky halloumi & veg option is a classic combo.

Serves 4

Ingredients

For the marinade:
  • 2 tbsp. olive oil
  • 1 tbsp. oregano
  • 1 tbsp. smoked paprika
  • Pinch of salt
For the rest:
  • 200g halloumi (cubed)
  • 1 courgette (cut into half-moon pieces)
  • 1 yellow pepper (chopped)
  • 400g cherry tomatoes

Method

1) First, add everything for the marinade to a bowl and stir well so that the mixture is properly combined.

2) Add the halloumi, courgette, pepper, and cherry tomatoes. Allow to marinate for 1 hour.

3) Then, build your skewers up by alternating between each marinated ingredient.

4) Place your skewers on the BBQ grill and cook until the veg softens and the halloumi begins to brown.
