Supposedly good enough to get a yes to a proposal... Marry Me Chicken is a take on the famous ‘engagement roast chicken’. Its juicy chicken cooked in a luscious creamy, garlicky sauce and paired with pasta. Add whatever veggies you fancy, and you’ve got a recipe good enough for a proposal.

What to serve with ‘marry me chicken’

While it makes for an incredibly tasty pasta sauce, you can serve ‘marry me chicken’ with plenty more than just pasta.

  • Mashed potatoes
  • Chips
  • Butternut squash, sweet potato or cauliflower rice
  • Rice
  • Bread for dunking

  • Use chicken boneless chicken thighs — chicken thighs tend to be a lot juicier than chicken breast (and cheaper too). Make sure to get the boneless, skinless ones though for minimum faff.
  • Swap coconut milk for double cream if you’re feeling like you want a richer meal.
  • Grate your own parmesan as sometimes the ready-grated cheese can be a little dry.
  • Use small pasta shapes like farfalle to allow it to cook easier.

How to batch cook and store safely

For me, pasta is an essential batch cooking recipe. And this one’s no different. Make a big batch and allow the pasta to cool before separating into airtight containers and putting them in the fridge. Grab a box and head for the microwave when you’re ready to eat. When stored in an airtight container in the fridge, this pasta should keep for up to 4 days.

How to reheat safely

When you’re ready to dig into your meal prep, add a couple drops of water and give it a mix before adding it to the microwave, this’ll loosen it up. Loosely pop the lid on the container, and heat until piping hot to bring your pasta back to life.

Make it veggie

It might be called ‘marry me chicken’ but there are plenty of smart swaps to make it veggie. Whether you want to swap the chicken for a vegan chicken replacement, or add some mushrooms in for that meaty texture, the options are endless.

To make this pasta gluten free, simply swap the farfalle for a gluten free pasta.

'Marry Me Chicken Pasta' Recipe

Servings:  3

Prep time:  10 mins

Cook time:  20 mins

Ingredients

  • 300 g chicken breast, chopped
  • 2 garlic cloves
  • 6 sun dried tomatoes
  • 1 tsp. oregano
  • 2 tsp. paprika
  • 160 g pasta
  • 130 ml light coconut milk, tinned
  • Handful spinach
  • 30 g parmesan cheese
  • 600 ml chicken stock

Instructions

  1. Drizzle some olive oil in a pan and add the chicken once it’s hot.

  2. Add your paprika, oregano, garlic and sun dried tomatoes. Cook for 6 mins to get some colour, stirring regularly.

  3. Add your pasta, stock and stir. Secure the lid on your pan and leave to simmer for 3 mins less than the pasta cooking instructions.

  4. Stir a few times during this time so the pasta cooks evenly.

  5. ️Add the coconut milk, Parmesan cheese and spinach. Stir and cook for 2-3 mins more until the pasta is perfectly cooked and the coconut milk hot.

  6. Serve with a drizzle of extra virgin olive oil, pepper and a sprinkling of extra parmesan cheese.
