High-Protein Cookie Dough Ice Cream
Forget forking out a fiver for those big brands in the freezer aisle — with this simple and delicious ice cream recipe from Niall Kirkland, you’ll be master of your own cookie dough cravings.
And, not only will this recipe hit the spot for sweet-tooth snacking this summer, but it’s a creative way to stay topped up on protein too. Each serving is loaded with over 18g of quality protein, making it all the easier for you to keep up with your daily requirements, while enjoying an indulgent scoop (or two).
Ingredients
- 20g ground almond
- 25g oat flour
1 scoop Impact Whey Protein (Vanilla) - 30g smooth peanut butter
- 1 tbsp. maple or agave syrup
1 tbsp. 100% Coconut Oil
- 200g fat-free yoghurt
1 scoop Impact Whey Protein (Vanilla) - 1 tbsp. vanilla bean paste
- 4 frozen bananas (sliced)
- 30g chocolate chips
Method
- Firstly, make sure you’ve prepared for this recipe by freezing your sliced bananas beforehand.
- Then, make your cookie dough. Add all cookie dough ingredients to a large bowl and mix together well until the mixture reaches a thick, dough-like consistency that holds together.
- Next, add all ice cream ingredients to a blender or food processor and blend until there are no lumps.
- Transfer your ice cream mixture into a baking tray or ice cream tub.
- Then, roll your cookie dough mixture into small balls and add them to the ice cream at even intervals.
- Mix in the chocolate chips to the ice cream, then sprinkle some more over the top.
- Finally, transfer your ice cream to your freezer and freeze overnight.
