Fajitas are a midweek staple for a reason. Succulent meat, vibrant veg and plenty of spices, all served up in a soft tortilla wrap.

Somehow, this air fryer chicken fajitas recipe takes them to the next level. Loaded with flavour and made effortlessly in the air fryer, that’s dinner ready in about 15 minutes.

What are fajitas?

Fajitas are a Tex-Mex classic. Served in a corn or tortilla wrap, they can include all kinds of fillings, but most of the time you’ll find meat, peppers and onions all fried in delicious spices.

Can you meal prep air fryer chicken fajitas?

You can. Cook up a batch one evening, then, once it’s cooled, store it in the fridge in airtight containers for up to three days.

How to reheat air fryer fajitas

Reheating couldn’t be easier. Simply place the filling in the microwave or an air fryer until it’s hot all the way through.

Make them vegan

Although fajitas are traditionally filled with some form of meat, you can make them meatless. Swap the chicken for tofu, mushrooms or beans, and use a dairy-free yoghurt for the sauce.

Variations and add-ins

Mix up the veg: Peppers and onions are the traditional vegetable fillings, but you could try baby corn, mangetout, mushrooms or broccoli. Anything you’ve got in the fridge.

Add cheese: Grate cheddar or crumble feta on top for some tang.

Switch the protein: Beef and pork work great as alternatives.

Air fryer chicken fajita recipe

Servings:  2 people

Prep time:  10 minutes

Cook time:  12 minutes

Ingredients

  • 2 peppers
  • 1 red onion
  • 1 tbsp. garlic
  • 300 g chicken breast
  • Half lime juice
  • 1 tbsp. oil
  • 30 g fajita seasoning
  • 100 g yoghurt
  • 1/2 tsp. garlic powder
  • 1/4 tsp. salt
  • 4 tortilla wraps
  • Sprinkling fresh coriander
  • Half avocado

Instructions

  1. Add peppers, onion, garlic, chicken, lime juice and fajita seasoning to the air fryer basket. Mix well.

  2. Air fry at 180C for 12 minutes, mixing halfway through.

  3. Time to assemble. Serve with avocado, coriander and garlicky yoghurt sauce. Add any other toppings you like.

While you could put an entire chicken breast into the air fryer and cook it this way before shredding and adding it to a wrap, the best way to ensure maximum flavour is to cut your chicken up beforehand.
